This offer does have some restrictions and limitations:
- I make no guarantees that you will like what I make. I will not take requests. I will accept allergen advisements.
- What I create will be just for you. But it may include source code, a schematic/BOM, or a protocol so that you can make more of them.
- It'll be done this year (2009).

On the gluten thing: there's a non-zero chance I might bake something, so are there any grains you are okay with? Spelt, millet, oats?

Spelt is a no... oats have to be sold as "gluten free" to be safe. Millet is controversial and best avoided to be safe :-)

I notice that almonds are on the okay list -- do you do any baking yourself? I have an almond-flour Sachertorte recipe around here somewhere. :)

If you can't find ground almonds at a store, a coffee grinder works really well -- the only problem I had was that the flour tends to accumulate under the blades, so getting it out can be tricky.
You also might like the selection at War Eagle Mill, which is an old stone waterwheel mill in Arkansas that my family's been going to for years. Their buckwheat and soy flours are really good, and they make the best cornmeal I've ever had anywhere. All their grains are organic, and the stone grinding really does make a difference as far as taste goes. We place a big bulk order every couple of months. :)
